Salt, granulated 19.00%
Sugar, granulated 18.00%
Maltodextrin, GCP M-250 13.50%
Starch, National Col. Flo. 67 10.00%
Chili Pepper, Mex dark 8.00%
Onion, granulated 7.00%
TABASCO® brand Dry Red Flavoring 6.00%
Black Pepper, coarse ground 2.00%
Oregano, Mexican leaf 1.50%
Oleoresin Paprika, 80,000CU 1.50%
Coriander, ground 1.50%
Cumin Seed, ground 1.50%
Lime Powder 0.50%
Caramel Color, Sethness BC42 0.50%
Flavor, OM Grill 0.50%

Manufacturing Procedures

  1. Blend all ingredients except oleoresin paprika until uniform. Add oleoresin paprika and blend to uniform color.
  2. Add 1 ounce (28 grams) of mix for pound of chicken wings to be prepared. Cover the wings with the seasoning by shaking in bag to assure a uniform coating. Bake uncovered for 45 minutes at 375°.
